Why a pizza pop-up is named after a piece of music.
In music, a cadenza is the moment a performer steps outside the written score — a burst of improvisation that still resolves perfectly into the piece. That's the idea behind every pizza we make: start from a classic, then take one confident, unwritten turn.
We keep the fundamentals honest — slow dough, San Marzano tomatoes, real whole-milk mozzarella — and then we improvise: truffle oil where you'd expect none, caramelized banana and Nutella where you'd expect, well, more pizza.
